Arizona in the summer is so insanely hot you have to get really creative to stay sane! Lots and lots of swimming is involved. I am also eating everything frozen or with ice cream. I think things taste better with ice or ice cream. Iced coffee is clearly superior to regular coffee in the summer. Frozen lemonade is better than regular lemonade. The other day I was in the mood for a donut but I thought what could I do to take this donut up a notch? That’s when I thought to add some ice cream. Yes, it was everything I dreamed of and more! I made some homemade cotton candy ice cream to put in it but you could use any kind of ice cream including store bought.
For the ice cream you need:
2 cups/one small container of heavy whipping cream
1 14 oz can of sweetened condensed milk
flavoring if desired, I used cotton candy
food coloring if desired
Chill the bowl you will be using for the whipping cream and make sure the cream is nice and cold. Whip the heavy whipping cream in standing mixer or with a hand mixer on high until it stiffens and resembles whipped cream. This will take a couple minutes but don’t whip it too long because it will loose it’s form. Add sweetened condensed milk. Add flavoring if desired according to the bottle, usually 1 or 2 tsp. For vanilla ice cream add 1 tsp of vanilla extract. Do not mix sweetened condensed milk and flavoring with the mixer. Use a large spoon to fold these ingredients in to the whipped cream. I also added a few drops of purple food coloring, it didn’t really photograph purple but it had a pretty light purple color. Then freeze overnight 6-8 hours and you have your easy yummy ice cream.
Now for the fun and easy part!
Cut the donut in half with a sharp knife. They can smash easily so be gentle and take your time. I didn’t want to freeze the donut because that would ruin the softness that makes it so delicious.
Scoop the ice cream onto the bottom half of the donut with a small scoop if you have one. With a small scoop it took 5 scoops with a large it would be about 2. Then put the top of the donut back on. For serving it can be a bit tricky since you want the donut soft and the ice cream not to melt. You might want to pre-scoop the ice cream, pre-cut the donuts or wait until the last minute to bring out the ice cream. This might not be a problem if you don’t live in Arizona like me where it is 110 degrees out. Everything turns into a puddle a few seconds. It melted a bit but it was so yummy.
Seriously, does it get any better than a donut ice cream sandwich?!
