Pineapple Cupcakes!

Pineapple cupcakes! By now if you follow my blog you will know I have a slight obsession with cupcakes! Yes, it is a bit of a problem but they are just so cute and yummy at the same time. The first step is admitting you have a problem, right? I have not mastered other desserts but cupcakes are just my favorite! I am also obsessed with pineapples they are just so fun and I love the pineapple decorations trend! I decided to make these cute cupcakes that look like pineapples. I also tried to make pineapple frosting but that failed. Instead I made a buttercream frosting with a hint of coconut. Buttercream is the best for piping. These are perfect for a pineapple party, a luau and summer celebrations!

For the frosting you need:

3 cups of confectioners sugar

1 cup of butter softened

3 tablespoons of milk

1 tsp of coconut extract

Cream butter in your standing mixer or by hand. Slowly add in the confectioners sugar on a low speed. Mix for 2 minutes or until smooth. Add milk and coconut mix for another minute. Mix in yellow food coloring about 6 drops.

For the piping use an open star tip. Squeeze a glob out and pull the tip upwards towards the top. Repeat this in rows starting from the top and working your way down. My suggestion is don’t be a perfectionist just keep it moving or else it will take forever. Wine, music and dancing are also helpful in the process or is that just me?!

Now for the topper you need:

green paper(I used cardstock)

toothpicks

tape

Take the green paper and cut it into 2 inch strips.

Take a strip of paper and cut out small triangles about a ½ inch up. I did not measure these to be even because pineapples are wild ;). Then cut up to about a half inch from the top. IMG_4878 IMG_4880

Wrap the bottom pointed parts up around your finger. Then wrap the paper around itself three times with the folded over part facing out. IMG_4884

Tape it on the inside of the end piece. Pull down the pieces to separate them.

Take a toothpick and tape it to the inside front part so that the paper won’t touch the cupcake when you put it on. Insert the toothpick sideways in to the top side.
