With Cinco De Mayo coming up I have had margaritas on the mind! It is also starting to heat up here in Arizona so all I want to do is consume frozen drinks. My coffee is about to get iced, iced tea, iced cocktails and just bathing in ice because it gets so ridiculously hot! We also are big into Cinco De Mayo here. I love a good margarita and I also love pineapples so I thought why not put them together. Honestly, I wasn’t sure if this combination would work out but this pineapple margarita is fantastic! Such a refreshing drink for summer and for a fiesta. Are you ready for a fiesta?! I think I need to have an online fiesta, wouldn’t that be fun! Pajama fiesta. That is mostly how I party these days anyways a marg in pjs while watching Scandal.
What you need to make it:
1 bag of frozen pineapple. Fresh is great to use as well you can just freeze cut up pieces of pineapple (3 cups) so you don’t have to use too much ice.
juice from 1 1/2 limes
1/2 cup of tequila(silver tequila is the way to go)
1/4 cup of triple sec
1/4 cup of pineapple juice
1 tablespoons of sugar
Combine all of the ingredients in a blender and blend until smooth. You can add a few scoops of ice if needed. You can also add juice from another lime if it is too sweet for your taste. This can make 2 to 4 drinks depending on how big you pour them ;).
Yum, so refreshing on a warm day. Next time I might add a bit of mango too. I love a good fruity margarita!
