For summer I love having desserts with fruit in them. I also like a simple dessert. These white chocolate covered fruit kabobs with rainbow sprinkles are perfect for a simple refreshing dessert! I chose rainbow colored fruits to give a pop of color. I also didn’t put all the kinds of fruit on one kabob because some people like different fruits. You could do a bunch of combinations of fruit too to give variety. I like them separated and how they look all lined up by color. I also toyed around with the idea of colorful candy melts for the chocolate drizzle but decided white chocolate with colorful sprinkles would look good. If you have a theme and a certain color you want to use you can add a colorful chocolate drizzle! I was thinking of orange, pink or another bright color. I also think colorful sprinkles are a nice touch for parties!
Put the fruit on bamboo skewered on a cookie sheet lined with parchment paper. Melt the white chocolate. You can melt it in the microwave on a defrost or medium power setting. Check on it after a minute and then stir it every 30 seconds until it is melted. Then drizzle the white chocolate over the fruit. I used a spoon and moved it quickly back and forth over the skewers starting from the top working down to the bottom.
Shake colorful sprinkles on over the white chocolate before it dries.
They look cute and are really tasty! Such a simple dessert for any party. Plus it is a good way to get kids to eat their fruit!
