Ice cream is one of my favorite desserts. In the summer it is number one on my list! This is the time of year to indulge in sweet treats. Swimsuit season is halfway over go crazy ;)! These are perfect little bites to serve for a group or just to make with kids. You can eat just one and not feel too bad because it is smaller than a normal ice cream sandwich. I loved how the Oreo ice cream sandwiches turned out and will definitely be making them again. They were really easy to make but they did take longer to make than to eat. That is my problem with desserts they seem to just disappear.
Ingredients:
Birthday cake Oreos or Oreo flavor of your choice
Vanilla or strawberry ice cream(once again you can choose any ice cream flavor you like
sprinkles
candy melts in any color(optional)
Twist off the top of an Oreo to open it. You can remove the cream filling but I like it with the cream and ice cream. Then take a small scoop or spoonful of ice cream. Put it on one side of the Oreo. Press the other side firmly on top and squeeze both sides together gently so you don’t break the oreo.
Dip the Oreos into sprinkles. I made them two ways one was dipped in melted candy melts on one side then dipped in rainbow sprinkles. The others I covered all sides with sprinkles. Before dipping them in sprinkles or chocolate put the Oreo ice cream sandwiches in the freezer for an hour. Then when you are dipping them put them back into the freezer for an hour or until you are ready to serve them. Simple as that and you are done!
I definitely went a little sprinkle crazy but I just love rainbow sprinkles! Next time I want to try chocolate Oreo filled with cookies and cream ice cream then dipped in chocolate sprinkles. The combinations of flavors is endless since there are a million kinds of Oreos!
