Cinco de Mayo is one of my favorite holidays. I grew up in Phoenix and we always have a big celebration for Cinco de Mayo. It is the perfect time of year to be outside by the pool. We have a pool party celebration with lots of food, of course beer, family, and friends. I love Mexican beer! Corona Extra was the first beer I ever tried and I immediately loved the clean, crisp taste. I also love the rich, refreshing flavor of Modelo Especial. It is a family favorite. For our Cinco de Mayo celebration everyone brings Mexican dishes to indulge in. Usually I am in charge of desserts. I am an expert at eating Mexican dishes but not at making them. Desserts are my favorite to make for all occasions. I love desserts that look like savory foods and that is why I thought it would be the perfect time to make cookies that look like little tacos. In the past I have made cupcakes that look like hot dogs and cookies that look like pizza. Now it’s time to tackle taco cookies! They add some extra fun to the dessert table! These have all the elements of a real taco in sweet dessert form. They also pair very well with Modelo Especial and Corona Extra. The flavors of these beers taste amazing with a little sweet bite. I don’t know about you but I need a little sweetness to balance out all of the spice from a Cinco de Mayo meal. My dad makes his specialty spicy shrimp that come with a warning label because of the heat level. Not everyone can handle the heat. I usually can have one before my mouth is on fire! read more

Funfetti Taco Cookies

I love tacos and I love cookies so I just had to put the two together. I made these adorable funfetti taco cookies that have fluffy frosting and colorful sprinkles all in a little taco shape! You can make these will all store bought foods not form scratch or make it all from scratch. I actually used the store bought marshmallow frosting and it was not too shabby. I usually make a homemade buttercream but sometimes I just don’t have time. Lack of time doesn’t stop me from making cute treats though! These are really fun to serve for a fiesta, Cinco De Mayo, or Taco Tuesday fun. They would be perfect for a girls night too. I also like to make real tacos because they are one of the few things that I can make and don’t have to keep looking at a recipe. Not to brag but I am the slowest cook around. I constantly forget how much of what to put in then I improvise and it all goes downhill from there. Luckily these cookies you can improvise with and they will still turn out yummy. Get creative with the frosting and sprinkles! You can do different colors of frosting and any color combination of sprinkles or shapes of sprinkles. read more

Who’s ready for a fiesta?! I know it’s not quite Cinco De Mayo, but in my opinion fiestas can happen any time of year. I love Mexican food and a colorful party! I think spring is a good time to start the fiestas and keep them going through the summer. It is the best time of year in Phoenix to get outdoors and entertain before it is too hot. This week has been all about the fiesta as I am getting ready for CInco De Mayo! I know it is a month early but that’s how it goes in the ole blogging world. You really get to celebrate every holiday twice! I made my pineapple margaritas and Mexican flower drink stirrers. Now I have these easy colorful tissue paper fiesta flowers! They are super duper easy to make and you can make a ton for a party. To use for a party backdrop, centerpieces and just scattered throughout a party. These are also fun to just make with kids. Mexican Flower Drink Stirrers for Cinco De Mayo and parties

I am getting ready for a fiesta! Margaritas, bright colorful tissue paper flowers, and Mexican food. I could seriously eat Mexican food every day, I kind of do haha. These little Mexican flower drink stirrers are the perfect touch in a margarita. They would be super cute in any bright color drink. Ole ole lets make some colorful fiesta flowers!

What you need to make them:

tissue paper in bright colors with at least three colors

wooden skewers

twine or ribbon

hot glue gun

strips of tissue paperstrips of tissue papercut the strips in 3 pieces

3 colors of tissue paper

Cut the tissue paper into two inch strips across the width of the tissue paper(shorter side of the tissue paper). Cut those pieces into thirds, they should be about 3 to 4 inches long. read more

With Cinco De Mayo coming up I have had margaritas on the mind! It is also starting to heat up here in Arizona so all I want to do is consume frozen drinks. My coffee is about to get iced, iced tea, iced cocktails and just bathing in ice because it gets so ridiculously hot! We also are big into Cinco De Mayo here. I love a good margarita and I also love pineapples so I thought why not put them together. Honestly, I wasn’t sure if this combination would work out but this pineapple margarita is fantastic! Such a refreshing drink for summer and for a fiesta. Are you ready for a fiesta?! I think I need to have an online fiesta, wouldn’t that be fun! Pajama fiesta.
